In the wet method, the cherries are pulped to remove the outer skin and then fermented in water to loosen the remaining fruit flesh. After fermentation, the beans are thoroughly washed to remove any residual pulp before being dried. This processing method generally produces a cleaner cup with brighter acidity and more pronounced flavor clarity.

Once the coffee beans have been dried to the desired moisture content, they are sorted, graded, and prepared for export. Brazil Santos coffee is known for its consistent quality, medium body, and a relatively low to moderate acidity. It typically offers a well-rounded flavor profile with notes of chocolate, nuts, and sometimes hints of fruitiness.
